These Zesty Lemon Rice Krispie Treats offer a bright citrus twist on the classic marshmallow snack, perfectly balancing tangy lemon flavor and sweet, crispy texture.

  • 6 cups Rice Krispies cereal
  • 3 tablespoons unsalted butter
  • 1 package (10 oz) mini marshmallows
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • Optional: yellow food coloring for enhanced color

Instructions

  1. In a large pot, melt the butter over low heat.
  2. Add the mini marshmallows and stir continuously until completely melted and smooth.
  3. Remove from heat and stir in lemon zest, lemon juice, and vanilla extract.
  4. If desired, add a few drops of yellow food coloring and mix until blended.
  5. Quickly fold in the Rice Krispies cereal until evenly coated.
  6. Press the mixture into a greased 9×13-inch pan using a buttered spatula or wax paper for an even layer.
  7. Allow to cool and set for at least 1 hour before slicing into squares.

Notes

For an extra burst of flavor, sprinkle a little extra lemon zest on top before the mixture sets or drizzle with white chocolate.
