Yellow Squash Parmesan is a delicious baked vegetable dish featuring tender yellow squash layered with a rich Parmesan cheese topping, perfect as a comforting side or light entrée.

  • 4 medium yellow squash, sliced into 1/4-inch rounds
  • 1 cup grated Parmesan cheese
  • 1/2 cup Italian-style breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced yellow squash with olive oil, minced garlic, Italian seasoning, salt, and pepper.
  3. Spread the squash slices evenly in a baking dish.
  4. In a small bowl, mix the Parmesan cheese and breadcrumbs together.
  5. Sprinkle the Parmesan-breadcrumb mixture evenly over the squash slices.
  6. Bake uncovered for 25-30 minutes, or until the squash is tender and the topping is golden brown.
  7. Remove from oven and let cool slightly before serving. Garnish with chopped fresh parsley if desired.

Notes

For an extra cheesy flavor, add a layer of shredded mozzarella before topping with the Parmesan mixture. Serve warm alongside grilled chicken or a fresh salad.
