  • 1 pound Italian sausage, removed from casing
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for garnish
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 8 ounces lasagna noodles, broken into bite-sized pieces
  • 1 cup shredded mozzarella cheese, plus more for garnish
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Break it apart with a spoon as it cooks. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot. Cook until the onion is softened, about 5 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. In a medium bowl, combine the ricotta cheese, heavy cream, Parmesan cheese, oregano, salt, and pepper. Mix well.
  5. Add the broken lasagna noodles to the simmering broth. Cook until the noodles are tender, about 8-10 minutes.
  6. Stir in the ricotta cheese mixture. Cook until heated through, about 2 minutes.
  7. Remove from heat and stir in 1 cup of shredded mozzarella cheese until melted.
  8. Ladle the soup into bowls. Garnish with additional Parmesan cheese, mozzarella cheese, and fresh parsley.
  9. Serve immediately.

Notes

For a spicier soup, use hot Italian sausage. You can also add spinach or other vegetables to the soup for added nutrients and flavor.
