Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 green bell pepper, diced
  • 2 cans (15 oz each) white chickpeas, drained and rinsed
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 can (4 oz) diced green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and green bell pepper; sauté until softened, about 5 minutes.
  2. Add cumin, oregano, smoked paprika, chili powder, and cayenne pepper; stir for 1 minute until fragrant.
  3. Pour in vegetable broth, diced green chilies, chickpeas, and white beans. Stir well to combine.
  4. Bring chili to a boil, then reduce heat and simmer uncovered for 20-25 minutes, stirring occasionally.
  5. Season with salt and black pepper to taste. Stir in lime juice just before serving.
  6. Ladle chili into bowls and garnish with chopped cilantro. Serve hot.

Notes

For added creaminess, blend a portion of the chili before finishing or top with avocado slices for extra flavor and texture.
