Delight in these rich and fudgy vegan no-bake brownies made with natural sweetness from dates and crunch from nuts, perfect for a healthy treat anytime.

Ingredients

  • 1 1/2 cups pitted dates
  • 1 cup walnuts
  • 1/2 cup almonds
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (optional)
  • 2 tablespoons coconut oil

Instructions

  1. Place dates, walnuts, and almonds in a food processor and pulse until finely chopped.
  2. Add cocoa powder, salt, vanilla extract, maple syrup, and coconut oil to the processor.
  3. Blend all ingredients until the mixture becomes sticky and well combined.
  4. Line an 8×8 inch pan with parchment paper.
  5. Press the mixture firmly into the pan, spreading evenly to form a compact layer.
  6. Refrigerate for at least 1 hour to set.
  7. Once set, cut into squares and serve chilled or at room temperature.

Notes

For an extra crunch, sprinkle chopped nuts on top before refrigerating, or add a pinch of sea salt for contrast.
