Valentine Strawberry Cookies

Delightfully sweet and soft Valentine Strawberry Cookies bursting with fresh strawberry flavor, perfect for sharing with loved ones on a special day.

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries, crushed
  • Red or pink food coloring (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and crushed freeze-dried strawberries.
  5. Gradually add the dry ingredients to the wet mixture and mix until a smooth dough forms. Add a few drops of food coloring if desired and mix to incorporate.
  6. Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets.
  7. Flatten each ball slightly with the palm of your hand or the bottom of a glass.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Dust with powdered sugar once cooled, if desired, and serve.

Notes

For extra strawberry flavor, add a teaspoon of strawberry extract to the dough or dip cooled cookies in white chocolate mixed with crushed freeze-dried strawberries.
