  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 6 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups cooked chicken, shredded
  • 4 ounces egg noodles
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until translucent, about 5 minutes.
  2. Add garlic, grated ginger, and turmeric. Cook for 1-2 minutes until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add carrots and celery, reduce heat to simmer, and cook for 10 minutes until vegetables are tender.
  5. Stir in shredded chicken and egg noodles. Cook for 6-8 minutes until noodles are tender.
  6. Season with salt and pepper to taste.
  7. Ladle soup into bowls and garnish with fresh parsley before serving.

Notes
