Turkey Spinach Mushroom Skillet

A wholesome and flavorful Turkey Spinach Mushroom Skillet combining lean ground turkey, fresh spinach, and sautéed mushrooms for a quick, nutritious meal perfect for busy weeknights.

  • 1 lb ground turkey
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 cup low-sodium chicken broth
  • Optional: 1/4 cup shredded Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onions and sauté until translucent, about 3 minutes.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground turkey to the skillet, breaking it up with a spoon, and cook until browned and cooked through, about 7-8 minutes.
  5. Season with salt, black pepper, and dried oregano; stir to combine.
  6. Add sliced mushrooms and cook until mushrooms are tender, about 5 minutes.
  7. Pour in chicken broth and let it simmer for 2 minutes.
  8. Add chopped spinach and cook until wilted, about 2-3 minutes.
  9. If desired, sprinkle shredded Parmesan cheese on top and allow to melt before serving.

Notes

For added depth, serve with a side of brown rice or quinoa. You can also swap ground turkey for ground chicken or tofu for a vegetarian option.
