  • 1 large egg
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds
  • 1/4 cup powdered sugar (for dusting, optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and almond extract until fully combined.
  4. In a separate bowl, whisk together all-purpose flour, almond flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms.
  6. Fold in the sliced almonds evenly throughout the dough.
  7. Using a tablespoon, scoop dough and roll into balls; place them onto the prepared baking sheets about 2 inches apart.
  8. Flatten each ball slightly with the palm of your hand or a fork.
  9. Bake for 12-15 minutes, or until edges are golden brown.
  10. Remove from oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  11. Optional: Dust with powdered sugar before serving for an extra touch of sweetness.
