Tiramisu Chia Pudding Delight

Enjoy the classic flavors of tiramisu in a healthy and convenient chia seed pudding. This no-bake dessert is perfect for a quick breakfast or a satisfying afternoon treat.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 1/4 cup strong brewed coffee, cooled
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 tablespoons unsweetened cocoa powder
  • Pinch of salt
  • Optional toppings: cocoa powder, chocolate shavings, coconut whipped cream

Instructions

  1. In a jar or container, combine chia seeds, almond milk, cooled coffee, maple syrup, vanilla extract, almond extract, cocoa powder, and salt.
  2. Stir well to ensure chia seeds are evenly distributed.
  3. Cover the jar or container and refrigerate for at least 2 hours, or preferably overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency.
  4. Before serving, stir the chia pudding to break up any clumps. Add more almond milk if needed to reach desired consistency.
  5. Serve chilled and top with cocoa powder, chocolate shavings, or coconut whipped cream, if desired.

Notes

For a richer flavor, use espresso instead of brewed coffee. You can also add a splash of coffee liqueur for an extra kick!
