Thai Peanut Curry

A rich and creamy Thai Peanut Curry combining savory peanut butter and aromatic spices for a deliciously satisfying meal.

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup carrots, sliced
  • 1 cup broccoli florets
  • 1 can (14 oz) coconut milk
  • 1/2 cup creamy peanut butter
  • 2 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 lime, juiced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup roasted peanuts, chopped (optional)
  • Cooked jasmine rice, to serve

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and grated ginger; sauté for 1 minute until fragrant.
  3. Stir in red bell pepper, carrots, and broccoli; cook for 4-5 minutes until vegetables start to soften.
  4. Mix in red curry paste and cook for another minute to release the flavors.
  5. Pour in coconut milk and stir in peanut butter, soy sauce, and brown sugar until smooth and combined.
  6. Simmer the curry over low heat for 10 minutes, stirring occasionally, until vegetables are tender and sauce thickens.
  7. Remove from heat and stir in lime juice and fresh cilantro.
  8. Serve hot over cooked jasmine rice and garnish with chopped roasted peanuts if desired.

Notes

For extra protein, add cooked chicken or tofu. Adjust the spice level by adding more or less red curry paste to suit your taste.
