  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1/2 cup yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 (15 oz) can tomato sauce
  • 1/2 cup heavy cream
  • 1/4 cup butter, unsalted
  • 1/4 cup cilantro, chopped, for garnish
  • Salt and pepper to taste
  • Cooked rice or naan bread, for serving

Instructions

  1. In a large bowl, toss the chicken cubes with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
  4. Stir in garam masala, turmeric powder, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  5. Pour in the tomato sauce and bring to a simmer. Reduce heat to low and simmer for 5 minutes, stirring occasionally.
  6. Stir in the heavy cream and butter. Cook until the butter is melted and the sauce is smooth.
  7. Return the cooked chicken to the skillet and stir to coat in the sauce. Simmer for another 5 minutes, allowing the chicken to absorb the flavors.
  8. Garnish with chopped cilantro.
  9. Serve hot over cooked rice or with naan bread.
