Teriyaki Salmon Avocado Rice

This Teriyaki Salmon Avocado Rice is a flavorful and wholesome dish combining tender salmon glazed with savory teriyaki sauce, creamy avocado, and fluffy rice for a satisfying meal.

  • 2 salmon fillets (6 oz each)
  • 1/4 cup teriyaki sauce
  • 1 cup jasmine rice
  • 2 cups water
  • 1 ripe avocado, sliced
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 green onion, chopped
  • 1 tablespoon sesame seeds
  • Salt and pepper, to taste

Instructions

  1. Rinse the jasmine rice under cold water and combine with 2 cups of water in a pot. Bring to a boil, then cover and reduce heat to low. Cook for 15 minutes or until water is absorbed and rice is tender.
  2. While the rice cooks, mix the teriyaki sauce, soy sauce, grated ginger, and minced garlic in a bowl.
  3. Heat sesame oil in a skillet over medium heat. Season salmon fillets with salt and pepper, then place skin-side down in the skillet. Cook for 4-5 minutes until crispy.
  4. Flip the salmon and brush generously with the teriyaki sauce mixture. Cook for another 4-5 minutes or until salmon is cooked through and glazed.
  5. Remove salmon from heat and let rest for a couple of minutes.
  6. Fluff the cooked rice with a fork and mix in the chopped green onion.
  7. Serve the salmon fillets over the rice, topped with sliced avocado and a sprinkle of sesame seeds.

Notes

For extra flavor, drizzle a little more teriyaki sauce or add a squeeze of fresh lime juice before serving.
