  • 1 (15 ounce) can creamed corn
  • 1 (14.75 ounce) can sweet corn, drained
  • 1 cup yellow cornmeal
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/4 cup melted butter
  • 2 large eggs, lightly beaten
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 8×8 inch baking dish.
  2. In a large bowl, combine creamed corn, sweet corn, cornmeal, milk, sour cream, melted butter, eggs, sugar, salt, and pepper.
  3. Pour mixture into the prepared baking dish.
  4. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let cool slightly before serving.

Notes

For an extra layer of flavor, sprinkle some shredded cheese on top during the last 10 minutes of baking. Cheddar or Monterey Jack would be delicious!
