This Sugar Cookie Cheesecake combines the tender, buttery flavors of classic sugar cookies with smooth, creamy cheesecake for an irresistible dessert perfect for any occasion.

  • 1 1/2 cups sugar cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • Optional: sprinkles or extra sugar cookie crumbs for topping

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine sugar cookie crumbs and melted butter. Press mixture firmly into the bottom of the pan to form the crust. Chill while preparing filling.
  3. In a large bowl, beat cream cheese until smooth. Gradually add sugar, beating until creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in vanilla extract, sour cream, and flour until just combined.
  6. Pour filling over the prepared crust and smooth the top.
  7. Bake for 50-60 minutes or until the center is almost set but slightly jiggly.
  8. Turn off oven and leave cheesecake inside with door slightly open for 1 hour.
  9. Remove from oven and refrigerate for at least 4 hours or overnight.
  10. Before serving, optionally garnish with sprinkles or extra sugar cookie crumbs.

Notes

For an extra burst of flavor, serve with fresh berries or a drizzle of caramel sauce.
