Strawberry White Chocolate Muffins

Light and fluffy muffins bursting with fresh strawberries and creamy white chocolate chunks, perfect for a delightful breakfast or snack.

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • 3/4 cup white chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the eggs, then add melted butter, buttermilk, and vanilla extract; mix well.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined, being careful not to overmix.
  5. Fold in the chopped strawberries and white chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra burst of flavor, sprinkle a little coarse sugar on top of the muffins before baking for a crunchy crust.
