  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry jam or preserves
  • 1/2 cup powdered sugar (for glaze)
  • 1-2 tablespoons milk (for glaze)
  • Sprinkles (optional, for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, salt, and granulated sugar.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. In a small bowl, beat the egg with vanilla extract and add it to the flour mixture; gently mix until dough begins to come together.
  5. Turn the dough onto a floured surface and knead lightly until smooth. Divide dough into two equal portions and roll each out into a rectangle about 1/8 inch thick.
  6. Cut rectangles into smaller squares or rectangles (about 3×2 inches).
  7. On half of the squares, place a teaspoon of strawberry jam in the center, leaving edges clear.
  8. Lightly brush edges with water, then cover with remaining squares and press edges to seal with a fork.
  9. Place cookies on the prepared baking sheet and bake for 15-18 minutes or until edges are lightly golden.
  10. Allow cookies to cool completely on a wire rack.
  11. Mix powdered sugar with milk to create a glaze and drizzle over cooled cookies. Add sprinkles if desired, then let glaze set before serving.
