This Strawberry Cream Cake Roll is a light and fluffy dessert featuring a delicate sponge cake rolled with fresh strawberry cream filling, perfect for spring and summer occasions.

  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for cream)
  • 1 cup fresh strawberries, chopped
  • Additional strawberries for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease.
  2. In a large bowl, beat the eggs and granulated sugar with an electric mixer until thick, pale, and tripled in volume, about 5 minutes. Add 1 teaspoon vanilla extract and mix gently.
  3. In a separate bowl, sift together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until combined, being careful not to deflate the batter.
  4. Pour the batter evenly into the prepared pan and spread gently. Bake for 12-15 minutes until the cake springs back when lightly touched.
  5. While cake is baking, lay a clean kitchen towel on the counter and dust it generously with powdered sugar.
  6. Once the cake is out of the oven, immediately loosen edges and invert onto the prepared towel. Carefully peel off the parchment paper. Starting at a short edge, roll the cake and towel together into a log. Let it cool completely.
  7. In a chilled bowl, whip the heavy cream, powdered sugar, and 1 teaspoon vanilla extract until stiff peaks form. Gently fold in the chopped strawberries.
  8. Unroll the cooled cake, spread the strawberry cream evenly over the surface, then re-roll without the towel.
  9. Refrigerate for at least 1 hour before slicing. Garnish with additional strawberries if desired and serve chilled.

Notes

For a festive twist, dust the top with powdered sugar or drizzle melted white chocolate before serving.
