Strawberry Cheesecake Bars

Deliciously creamy strawberry cheesecake bars with a buttery crust and fresh strawberry topping, perfect for a sweet dessert or snack.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz (450g) cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 2 tablespoons strawberry jam (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture firmly into the bottom of the prepared pan to form the crust.
  3. Bake crust for 10 minutes, then remove from oven and let cool slightly.
  4. In a large bowl, beat cream cheese until smooth. Add 2/3 cup sugar and continue beating until well combined.
  5. Add eggs one at a time, beating just until blended after each addition. Stir in vanilla extract.
  6. Pour cheesecake mixture over the crust and spread evenly.
  7. Arrange chopped strawberries evenly on top of cheesecake layer. Optionally, drizzle with strawberry jam for extra sweetness and shine.
  8. Bake for 30-35 minutes, or until edges are set and center is slightly jiggly.
  9. Remove from oven and cool completely before refrigerating for at least 3 hours or overnight.
  10. Cut into bars and serve chilled.

Notes

For best results, use ripe fresh strawberries and chill the bars overnight to achieve a creamy, firm texture. You can also swirl in strawberry jam before baking for a marbled effect.
