Spicy Shrimp Sushi Stacks

Spicy Shrimp Sushi Stacks are a vibrant, flavorful twist on classic sushi, layering tender shrimp with spicy mayo and sticky sushi rice for an easy yet elegant appetizer or light meal.

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 12 large cooked shrimp, peeled and chopped
  • 3 tablespoons mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon sesame oil
  • 1 avocado, diced
  • 1 cucumber, peeled and diced
  • 2 sheets nori, cut into small pieces (optional)
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Soy sauce, for serving

Instructions

  1. Rinse sushi rice under cold water until water runs clear. Combine rice and water in a pot, bring to a boil, then reduce heat to low, cover and simmer for 18 minutes. Remove from heat and let stand covered for 10 minutes.
  2. Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold into the cooked rice and allow to cool to room temperature.
  3. In a bowl, combine mayonnaise, Sriracha, and sesame oil to make spicy mayo. Mix in the chopped shrimp until evenly coated.
  4. Using a ring mold or small bowl, layer sushi stacks by first pressing a spoonful of sushi rice, then a layer of diced cucumber, followed by avocado, and finally the spicy shrimp mixture. Repeat layers if space allows.
  5. Carefully remove the mold and garnish each stack with chopped green onions, toasted sesame seeds, and optional nori pieces.
  6. Serve immediately with soy sauce on the side for dipping.

Notes

For an extra kick, drizzle additional Sriracha over the top or add a sprinkle of togarashi seasoning before serving.
