  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted (for coating)
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • Maple syrup, for serving (optional)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, beat the egg and then whisk in the milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour 1/4 cup portions of batter onto the skillet and cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  6. Flip pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  7. In a shallow bowl, mix granulated sugar and ground cinnamon for the coating.
  8. Brush each cooked pancake with melted butter, then generously coat both sides with the cinnamon sugar mixture.
  9. Serve immediately with maple syrup if desired.

For an indulgent touch, serve these pancakes with dulce de leche or a drizzle of chocolate sauce.
