Delicious Spaghetti Squash Dinner

Enjoy a healthy and satisfying spaghetti squash dinner! This easy recipe features roasted spaghetti squash tossed with flavorful marinara sauce and your favorite toppings.

  • 1 medium spaghetti squash
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (24-ounce) jar marinara sauce
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  2. Drizzle the cut sides of the squash with olive oil and season with salt and pepper.
  3. Place the squash cut-side down on a baking sheet and bake for 45-60 minutes, or until the squash is easily pierced with a fork.
  4. Let the squash cool slightly, then use a fork to shred the flesh into spaghetti-like strands.
  5. In a large bowl, toss the spaghetti squash with marinara sauce and Parmesan cheese.
  6. Serve immediately, garnished with fresh basil and additional Parmesan cheese, if desired.
