This Southwest Chicken Soup is a hearty and flavorful meal, packed with chicken, beans, corn, and Southwestern spices. It’s the perfect comforting dish for a chilly evening.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 jalapeño, seeded and minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 4 cups chicken broth
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 (10-ounce) can diced tomatoes and green chilies (like Rotel), undrained
  • 1 pound cooked chicken, shredded
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, avocado, cilantro, tortilla chips

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, red bell pepper, and jalapeño and cook for another 3-5 minutes, until slightly softened.
  3. Stir in chili powder, cumin, and smoked paprika and cook for 1 minute, until fragrant.
  4. Pour in chicken broth and bring to a simmer.
  5. Add black beans, corn, and diced tomatoes and green chilies.
  6. Stir in shredded chicken and season with salt and pepper to taste.
  7. Simmer for at least 15 minutes to allow flavors to meld.
  8. Serve hot with your favorite toppings.

Notes

For a creamier soup, stir in a dollop of sour cream or Greek yogurt before serving. You can also add a squeeze of lime juice for extra flavor.
