  • 1 cup sourdough discard
  • 1/2 cup sugar
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Vegetable oil for frying
  • 1/2 cup sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. In a large bowl, whisk together the sourdough discard, 1/2 cup sugar, eggs, melted butter, and vanilla extract until well combined.
  2. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing just until combined to form a soft dough.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Using a spoon or donut cutter, shape the dough into small donuts or donut holes.
  6. Carefully fry the donuts in batches until golden brown, about 2-3 minutes per side.
  7. Remove with a slotted spoon and drain on paper towels.
  8. Mix the 1/2 cup sugar and ground cinnamon in a shallow bowl.
  9. While still warm, roll the donuts in the cinnamon sugar mixture until fully coated.
