Homemade Sourdough Blueberry Breakfast Bars

These Sourdough Blueberry Breakfast Bars combine the tangy flavor of sourdough with sweet, juicy blueberries for a wholesome and energizing start to your day.

  • 1 cup sourdough starter (unfed or discard)
  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine the sourdough starter, melted coconut oil, honey, egg, and vanilla extract. Mix well.
  3. In another bowl, whisk together the rolled oats, whole wheat flour, brown sugar, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Gently fold in the fresh blueberries, being careful not to crush them.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  8. Allow to cool completely in the pan before cutting into bars.

Notes

For extra flavor and crunch, sprinkle some chopped nuts or seeds on top before baking.
