This Snickerdoodle Banana Bread combines the classic cinnamon-sugar flavors of snickerdoodles with moist, ripe bananas for a delicious twist on traditional banana bread.

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 2 teaspoons ground cinnamon (for topping)
  • 2 tablespoons granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream the softened butter with granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in mashed bananas, vanilla extract, and sour cream until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
  7. Pour batter into the prepared loaf pan, smoothing the top.
  8. In a small bowl, combine 2 teaspoons cinnamon and 2 tablespoons sugar, then sprinkle evenly over the batter.
  9. Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then remove to a wire rack to cool completely before slicing.

Notes

For an extra moist texture, substitute sour cream with Greek yogurt or add a handful of chopped walnuts for crunch.
