Slow Cooker Goulash

This Slow Cooker Goulash is a comforting, hearty dish featuring tender beef, rich tomato sauce, and tender pasta, perfect for an easy weeknight meal.

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups elbow macaroni, uncooked
  • 1 cup shredded cheddar cheese

Instructions

  1. In a skillet, brown the ground beef over medium heat, breaking it up as it cooks. Drain excess fat.
  2. Add chopped onion and minced garlic to the skillet and cook until softened, about 3 minutes.
  3. Transfer the beef mixture to the slow cooker.
  4. Add tomato sauce, diced tomatoes, beef broth, Worcestershire sauce, paprika, oregano, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 5 hours.
  6. About 30 minutes before serving, stir in the uncooked elbow macaroni.
  7. Recover and continue cooking on low until the pasta is tender, about 25 to 30 minutes.
  8. Stir in shredded cheddar cheese until melted and combined.
  9. Serve hot, garnished with extra cheese or fresh parsley if desired.

Notes

For a creamier texture, stir in 1/4 cup of sour cream just before serving.
