Slow Cooker Chicken Posole

A hearty and flavorful slow cooker chicken posole featuring tender chicken, hominy, and a rich blend of spices perfect for a comforting Mexican-inspired meal.

  • 2 lbs boneless skinless chicken thighs
  • 1 large white onion, diced
  • 4 cloves garlic, minced
  • 2 (15 oz) cans white hominy, drained and rinsed
  • 3 cups chicken broth
  • 1 (4 oz) can diced green chilies
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons fresh lime juice
  • Fresh cilantro, chopped (for garnish)
  • Sliced radishes, for garnish
  • Shredded lettuce, for garnish
  • Avocado slices, for serving

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add diced onion, garlic, hominy, green chilies, cumin, oregano, smoked paprika, salt, and pepper.
  3. Pour chicken broth over all ingredients.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken is cooked through and tender.
  5. Remove chicken breasts and shred with two forks, then return to the slow cooker and stir.
  6. Add fresh lime juice and stir to combine.
  7. Serve posole hot, garnished with cilantro, radishes, shredded lettuce, and avocado slices.

Notes

For an extra kick, add a few dashes of hot sauce or top with sliced jalapeños when serving.
