This Skillet Cranberry Orange Chicken features tender chicken breasts cooked in a zesty orange and tart cranberry sauce, perfect for a flavorful weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup chicken broth
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon orange zest
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in orange juice, chicken broth, honey, and add orange zest. Stir to combine.
  6. Add the fresh cranberries and simmer the sauce for about 8 minutes until cranberries start to burst and the sauce thickens.
  7. Return the chicken breasts to the skillet, spooning sauce over them, and cook for another 2 minutes to heat through.
  8. Garnish with fresh thyme if desired and serve warm.

Notes

For extra flavor, serve with steamed rice or roasted vegetables and garnish with additional fresh herbs like rosemary or parsley.
