Homemade Pineapple Cowboy Candy Close-Up

This spicy-sweet and tangy candied pineapple, infused with jalapeños and a flavorful brine, is an irresistible treat. Perfect for snacking, topping tacos, or adding a kick to your next BBQ.

  • 1 medium fresh pineapple, cored and sliced into 1/4-inch rings
  • 3-4 fresh jalapeños, thinly sliced (remove seeds for less heat, if desired)
  • 1 cup apple cider vinegar
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional, for extra heat)
  • 1/2 teaspoon salt

Instructions

  1. Prepare Pineapple and Jalapeños: Peel and core the pineapple, then slice it into 1/4-inch thick rings. Thinly slice the jalapeños. If you prefer less heat, remove the seeds and membranes from the jalapeños.
  2. Combine Brine Ingredients: In a large non-reactive pot (stainless steel or enameled cast iron), combine the apple cider vinegar, granulated sugar, brown sugar, turmeric powder, garlic powder, onion powder, cayenne pepper (if using), and salt.
  3. Bring to a Simmer: Bring the mixture to a rolling boil over medium-high heat, stirring until the sugars are completely dissolved. Reduce heat to medium-low.
  4. Add Pineapple and Jalapeños: Carefully add the pineapple rings and sliced jalapeños to the simmering brine. Ensure all pieces are submerged as much as possible.
  5. Simmer and Reduce: Simmer for 30-45 minutes, or until the pineapple has softened, turned slightly translucent, and absorbed some of the brine, and the liquid has thickened into a syrupy consistency. Stir occasionally to prevent sticking.
  6. Cool and Jar: Remove the pot from the heat. Allow the Pineapple Cowboy Candy to cool slightly in the pot. Using tongs, carefully transfer the pineapple and jalapeño slices into clean, sterilized jars. Pour the thickened syrup over them, ensuring all ingredients are covered.
  7. Store: Seal the jars and refrigerate for at least 24 hours before serving to allow the flavors to meld. The Pineapple Cowboy Candy will keep in the refrigerator for up to 2-3 weeks.

Notes

For a delightful appetizer, serve a few pieces of Pineapple Cowboy Candy on a cracker with a dollop of cream cheese. It also makes a fantastic topping for grilled chicken, pork tacos, or even a unique addition to a cheese board.
