Shrimp with Creamed Corn Feta

Delight in tender shrimp served over a rich and creamy blend of sweet corn and tangy feta cheese, creating a harmonious and flavorful dish perfect for any dinner.

  • 1 lb large shrimp, peeled and deveined
  • 2 cups fresh or frozen corn kernels
  • 1/2 cup crumbled feta cheese
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 small shallot, finely chopped
  • 1 tbsp fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add shallots and garlic, sauté until fragrant and translucent, about 2 minutes.
  3. Add the corn kernels and cook for 3-4 minutes until tender.
  4. Pour in the heavy cream and bring to a gentle simmer.
  5. Stir in the crumbled feta cheese until melted and creamy. Season with salt and pepper to taste.
  6. In a separate pan, sauté the shrimp in a little olive oil for 2-3 minutes per side until pink and cooked through. Season with salt, pepper, and lemon juice.
  7. Serve the shrimp atop the creamed corn feta mixture.
  8. Garnish with chopped fresh parsley and an extra squeeze of lemon if desired.

Notes

For a spicier kick, add a pinch of cayenne pepper to the creamed corn mixture or garnish with fresh chili flakes.
