Shrimp Fried Rice

Homemade Shrimp Fried Rice Close-Up

A flavorful and easy-to-make Shrimp Fried Rice combining succulent shrimp, fresh vegetables, and fragrant rice for a quick and satisfying meal.

  • 2 cups cooked jasmine rice (preferably day-old)
  • 12 oz shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup frozen peas and carrots
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes. Remove shrimp and set aside.
  3. Add the remaining oil to the pan. Sauté garlic and onions until fragrant and translucent.
  4. Push the garlic and onions to the side. Pour in beaten eggs and scramble until just set.
  5. Add frozen peas and carrots; cook for 2 minutes until tender.
  6. Add cooked rice to the skillet, breaking up any clumps. Stir-fry for 2-3 minutes to heat through.
  7. Return shrimp to the pan and mix well.
  8. Stir in soy sauce and oyster sauce, adjusting seasoning to taste.
  9. Remove from heat, garnish with sliced green onions, and serve hot.

Notes

For extra flavor, try adding a splash of sesame oil at the end or topping with chopped cilantro before serving.
