Short Rib Sliders with Balsamic Cranberry Sauce

These Short Rib Sliders feature tender, slow-cooked beef paired with a tangy balsamic cranberry sauce, perfect for an elegant appetizer or casual dinner.

  • 2 lbs beef short ribs
  • 1 cup balsamic vinegar
  • 1 cup fresh cranberries
  • 1/2 cup brown sugar
  • 12 slider buns
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh arugula or spinach for garnish

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Season short ribs with salt and pepper.
  3. Heat olive oil in a large oven-safe pot over medium-high heat and brown the short ribs on all sides.
  4. Add chopped onion and garlic; sauté until softened.
  5. Pour in balsamic vinegar and brown sugar, stirring to combine.
  6. Cover the pot and transfer to the oven; braise for 3 hours or until meat is tender.
  7. Meanwhile, in a small saucepan, simmer cranberries with a splash of balsamic vinegar and a pinch of brown sugar until they burst and form a sauce.
  8. Shred the cooked short ribs and toss with pan juices.
  9. Assemble sliders by placing shredded short ribs on buns, topping with balsamic cranberry sauce and a handful of arugula or spinach.
  10. Serve warm and enjoy!

Notes

For extra flavor, toast the slider buns before assembling and add a slice of sharp cheddar cheese if desired.
