Hearty Sausage Sweet Potato Kale Soup

This Sausage Sweet Potato Kale Soup is a hearty and healthy one-pot meal, packed with flavor and nutrients. The sweet potatoes add a touch of sweetness that perfectly complements the savory sausage and earthy kale.

Ingredients

  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 medium sweet potatoes, peeled and diced
  • 1 bunch kale, stemmed and chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the sausage over medium-high heat, breaking it up with a spoon. Remove the sausage from the pot and set aside.
  2. Add olive oil to the pot and sauté the onion until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  3. Pour in the chicken broth and add the sweet potatoes, thyme, and red pepper flakes (if using). Bring to a boil, then reduce heat and simmer for 15 minutes, or until the sweet potatoes are tender.
  4. Stir in the kale and cook until wilted, about 5 minutes.
  5. Return the sausage to the pot. Season with salt and pepper to taste.
  6. Simmer for another 5 minutes to allow the flavors to meld.
  7. Serve hot.
