Sausage and Courgette Pasta

A hearty and flavorful pasta dish combining savory sausage with tender courgettes, perfect for a quick and satisfying Italian-inspired meal.

  • 200g pasta (penne or rigatoni)
  • 2 sausages (about 200g), casings removed
  • 1 large courgette, sliced
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sauté until softened and fragrant, about 2 minutes.
  3. Add the sausage meat to the skillet, breaking it up with a spoon, and cook until browned and cooked through, about 5–7 minutes.
  4. Stir in the sliced courgette and cherry tomatoes, cooking until the courgette is tender but still slightly crisp, about 4 minutes.
  5. Season the mixture with salt and pepper to taste.
  6. Add the cooked pasta to the skillet, tossing everything together to combine and heat through.
  7. Remove from heat, sprinkle with Parmesan cheese and garnish with fresh basil leaves before serving.

Notes

For extra flavor, add a pinch of red chili flakes when cooking the sausage or finish with a drizzle of good-quality extra virgin olive oil.
