  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, cocoa powder, and salt; set aside.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the egg, vanilla extract, and red food coloring to the butter mixture and mix well.
  5. In a small bowl, combine vinegar and baking soda; stir and add immediately to the wet ingredients.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  7. Roll dough into 1-inch balls and place on prepared baking sheets, spacing 2 inches apart.
  8. Flatten each ball slightly with the palm of your hand or bottom of a glass.
  9. Bake for 10-12 minutes, until edges are set but centers are still soft.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra touch, drizzle white chocolate over cooled cookies or sprinkle with coarse sugar before baking for added crunch.
