  • 1 loaf brioche or challah bread, cubed
  • 2 cups pumpkin puree
  • 1 cup whole milk
  • 1 cup heavy cream
  • 5 large eggs
  • 3/4 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting (optional)
  • Maple syrup, for serving

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Spread the cubed bread evenly in the baking dish.
  3. In a large bowl, whisk together pumpkin puree, milk, heavy cream, eggs, brown sugar, pumpkin pie spice, cinnamon, nutmeg, vanilla extract, and salt until smooth.
  4. Pour the pumpkin custard mixture over the bread cubes, pressing gently to soak all pieces.
  5. Cover with foil and refrigerate for at least 2 hours or overnight for best results.
  6. Remove from refrigerator about 30 minutes before baking to come to room temperature.
  7. Bake covered for 35 minutes, then remove foil and bake an additional 15 minutes until the top is golden and set.
  8. Let the casserole cool slightly before dusting with powdered sugar and serving with maple syrup.

Notes

For an extra crunchy topping, sprinkle chopped pecans mixed with brown sugar before baking. This casserole also pairs beautifully with a dollop of whipped cream.
