Delicious Slice of Possum Pie

This classic Possum Pie is a decadent and delightful dessert featuring layers of creamy filling and a rich chocolate crust. It’s a surprisingly delicious treat perfect for special occasions or when you need a little indulgence.

  • 1 (15 ounce) package chocolate sandwich cookies, finely crushed
  • 6 tablespoons butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (12 ounce) container frozen whipped topping, thawed, divided
  • 1 (3.4 ounce) package instant vanilla pudding mix
  • 2 cups milk
  • 1/4 cup chopped pecans, for garnish (optional)

Instructions

  1. In a medium bowl, combine the crushed chocolate sandwich cookies and melted butter. Press the mixture into the bottom of a 9-inch pie plate.
  2. In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy. Gently fold in 1 cup of the thawed whipped topping. Spread the cream cheese mixture evenly over the cookie crust.
  3. In a separate bowl, whisk together the instant vanilla pudding mix and milk until thickened. Spread the pudding mixture evenly over the cream cheese layer.
  4. Top the pie with the remaining whipped topping. Sprinkle with chopped pecans, if desired.
  5. Cover and refrigerate for at least 2 hours before serving.

Notes

For an extra layer of flavor, drizzle chocolate syrup over the pie before serving. You can also substitute the vanilla pudding with chocolate pudding for a richer chocolate experience.
