Pollo Asado

Pollo Asado is a flavorful Mexican grilled chicken marinated in citrus and spices, offering a juicy and aromatic dish perfect for any meal.

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a bowl, combine orange juice, lime juice, minced garlic, cumin, smoked paprika, oregano, chili powder, salt, pepper, and olive oil to make the marinade.
  2. Place the chicken thighs in a large resealable bag or container and pour the marinade over the chicken. Seal and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove chicken from marinade and place on the grill skin side down. Grill for about 6-8 minutes per side, or until internal temperature reaches 165°F (74°C) and skin is crispy.
  5. Remove from grill and let rest for 5 minutes.
  6. Garnish with chopped fresh cilantro and serve hot.

Notes

For extra smoky flavor, try cooking the chicken over charcoal or adding a chipotle pepper to the marinade.
