  • 1 (8 ounce) can crushed pineapple, well drained
  • 1/2 cup chopped pecans, divided
  • 1/4 cup chopped green bell pepper
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon brown sugar
  • 1/4 teaspoon garlic powder
  • Crackers, for serving

Instructions

  1. In a medium bowl, beat the softened cream cheese until smooth and creamy.
  2. Add the drained crushed pineapple, 1/4 cup of the chopped pecans, green bell pepper, parsley, brown sugar, and garlic powder. Mix well to combine.
  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the cheese ball to firm up.
  4. Remove the cheese mixture from the refrigerator. Shape the mixture into a ball.
  5. Spread the remaining 1/4 cup chopped pecans on a plate. Roll the cheese ball in the pecans to coat completely.
  6. Serve immediately with crackers, or chill for later use.
