  • 1 fresh pineapple, peeled, cored, and sliced into 1/4-inch thick rings
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (or more, to taste)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 170°F (77°C) or use a dehydrator.
  2. In a medium bowl, whisk together apple cider vinegar, brown sugar, honey, chili powder, smoked paprika, cayenne pepper, garlic powder, onion powder, and salt.
  3. Dip each pineapple ring into the spice mixture, ensuring both sides are well coated.
  4. Arrange the pineapple rings in a single layer on a baking sheet lined with parchment paper or on dehydrator trays.
  5. Bake in the preheated oven (or dehydrate) for 6-8 hours, or until the pineapple is slightly chewy and no longer wet. Flip the pineapple rings halfway through the drying time.
  6. Let the pineapple cowboy candy cool completely before storing in an airtight container.

Notes

For a milder flavor, reduce the amount of cayenne pepper. You can also add other spices like cumin or chipotle powder to customize the flavor. Serve as a snack, add to charcuterie boards, or use as a garnish for cocktails.
