Ingredients

Scale
  • 1 pound beef sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces cream cheese, softened
  • 1 cup shredded provolone cheese
  • Optional: crusty rolls for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add beef and cook until browned. Remove beef from pot and set aside.
  2. Add onion and bell peppers to the pot and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  3. Pour in beef broth and Worcestershire sauce. Stir in thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Stir in cream cheese until melted and smooth.
  5. Return beef to the pot. Stir in provolone cheese until melted.
  6. Serve hot, garnished with extra provolone cheese if desired. Crusty rolls are a great addition!

Notes

For a richer flavor, use a combination of beef broth and beef stock. Top with fried onions or banana peppers for extra Philly flair.
