Peruvian-Style Roast Chicken

This Peruvian-Style Roast Chicken features a flavorful blend of spices and herbs delivering a juicy, crispy, and aromatic main dish inspired by traditional Peruvian cuisine.

  • 1 whole chicken (about 4 lbs)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tbsp dried oregano
  • 1 tsp chili powder
  • 2 tbsp white vinegar
  • Juice of 1 lime
  • Salt and freshly ground black pepper, to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix garlic, olive oil, cumin, smoked paprika, oregano, chili powder, white vinegar, lime juice, salt, and pepper to create the marinade.
  3. Pat the chicken dry with paper towels. Rub the marinade all over the chicken, including under the skin and inside the cavity.
  4. Place the chicken breast-side up in a roasting pan or ovenproof skillet.
  5. Roast the chicken uncovered for about 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  6. Remove the chicken from the oven and let it rest for 10 minutes before carving.
  7. Garnish with chopped fresh cilantro and serve.

Notes

For an authentic touch, serve with traditional Peruvian green sauce (aji verde) and roasted potatoes.
