Roasted Chicken

This classic roasted chicken is juicy and flavorful, featuring crispy golden skin and tender meat, perfect for a comforting family dinner.

Ingredients

  • 1 whole chicken (about 4 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 4 garlic cloves, minced
  • 1 lemon, halved
  • 1 onion, quartered

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken, then season with salt, pepper, thyme, rosemary, and minced garlic.
  4. Place the lemon halves and onion quarters inside the chicken cavity.
  5. Place the chicken breast-side up on a roasting pan or baking dish.
  6. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from oven and let rest for 10 minutes before carving and serving.

Notes

For extra crispy skin, baste the chicken with its own juices halfway through roasting.
