Peppermint Meltaway Cookies

These Peppermint Meltaway Cookies are incredibly soft and melt in your mouth, with a refreshing peppermint flavor perfect for the holidays. A simple powdered sugar coating adds a touch of sweetness and elegance.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for coating
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 2 1/4 cups all-purpose flour
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Stir in the peppermint extract and salt.
  4. Gradually add the flour, mixing until just combined.
  5. Stir in the crushed peppermint candies.
  6. Roll the dough into 1-inch balls.
  7. Place the cookies on ungreased baking sheets.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. Once cool, roll the cookies in powdered sugar to coat.

Notes

For an extra touch, drizzle the cookies with melted white chocolate after coating them in powdered sugar.
