Delight in these rich and buttery Pecan Pie Cookies that combine the classic flavors of pecan pie into a perfect handheld treat. Crispy edges with a gooey, nutty center make them irresistible for dessert or snack time.

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups chopped pecans
  • 1/2 cup light corn syrup
  • 1/4 cup melted butter (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet and press down slightly to flatten.
  7. In a small bowl, mix chopped pecans, corn syrup, and melted butter to create the filling.
  8. Make a small indentation in the center of each cookie dough round and spoon a teaspoon of the pecan filling into each.
  9. Bake for 12–15 minutes until edges are golden and filling is set.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra gooeyness, drizzle melted chocolate over cooled cookies or serve with a scoop of vanilla ice cream.
