  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • For the Cheesecake Filling:
  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Pecan Pie Topping:
  • 1/2 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • 1/4 cup corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves

Instructions

  1. Make the Crust: Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a 9×13 inch baking dish.
  2. Make the Cheesecake Filling: In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract. Pour over the crust.
  3. Make the Pecan Pie Topping: In a saucepan, melt butter. Stir in brown sugar, corn syrup, vanilla extract, and salt. Bring to a simmer, stirring constantly. Remove from heat and stir in pecan halves.
  4. Assemble and Bake: Pour the pecan pie topping evenly over the cheesecake filling. Bake for 30-35 minutes, or until the cheesecake is set.
  5. Cool and Chill: Let cool completely in the baking dish, then refrigerate for at least 2 hours before cutting into bars.

Notes

For a richer flavor, toast the pecan halves before adding them to the topping.
