Deliciously soft and chewy peanut butter cookies made with simple ingredients, perfect for a quick homemade treat.

  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, sugar, egg, and vanilla extract until smooth.
  3. Add baking soda and salt; mix well to combine.
  4. Roll dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet.
  5. Use a fork to gently flatten each ball in a crisscross pattern.
  6. Bake for 10-12 minutes until edges are lightly browned.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, try adding a handful of chocolate chips or chopped peanuts to the dough before baking.
