Orange Rosemary Roasted Chicken

This Orange Rosemary Roasted Chicken features tender, juicy chicken infused with bright citrus and fragrant rosemary, perfect for a flavorful and easy weeknight dinner.

  • 1 whole chicken (about 4 lbs)
  • 2 oranges, zested and juiced
  • 3 sprigs fresh rosemary
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup chicken broth

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine orange zest, orange juice, minced garlic, olive oil, salt, pepper, and paprika.
  3. Place the chicken in a roasting pan and rub the orange-rosemary mixture all over the chicken, including under the skin.
  4. Stuff the cavity with rosemary sprigs and one orange sliced in half.
  5. Roast the chicken for 1 hour and 15 minutes, basting occasionally with pan juices.
  6. About 15 minutes before done, add chicken broth to the pan to keep the chicken moist.
  7. Remove from oven and let rest for 10 minutes before carving and serving.

Notes

For extra crispy skin, broil the chicken for the last 3-5 minutes, watching carefully to avoid burning.
