A Delicious One-Pot Red Beans and Rice Dish

This classic one-pot red beans and rice recipe is a hearty and flavorful meal perfect for a weeknight dinner. It’s packed with smoky sausage, tender beans, and Creole spices, all cooked together in one pot for easy cleanup!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, such as andouille, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup long-grain rice
  • Salt and black pepper to taste
  • Optional garnishes: chopped green onions, hot sauce

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.
  2. Add the onion and bell pepper to the pot and cook until softened, about 5 minutes. Add the garlic, Creole seasoning, thyme, and cayenne pepper (if using) and cook for 1 minute more, until fragrant.
  3. Stir in the kidney beans, diced tomatoes, chicken broth, and rice. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  4. Return the sausage to the pot and stir to combine. Season with salt and black pepper to taste.
  5. Serve hot, garnished with chopped green onions and hot sauce, if desired.

Notes

For a creamier dish, mash some of the beans with a fork before serving. You can also add a bay leaf during cooking for extra flavor, just remember to remove it before serving.
